Ventura Hood Installations Company Says Routine Cleanings Can Prevent Costly Fires in Restaurant Kitchens
PLACENTIA, CA—American Professional Services (APS-Hoods), which performs Ventura, CA hood installations, recently released a recommended cleaning schedule for restaurant owners to follow, in an effort to prevent grease build-up in commercial kitchens.
Grease that is left to clog link lines in fire suppression systems, or that builds up in hood plenums and ducts can fuel a fire if one was to break out, said Massoud Farazandeh, chief executive officer of APS-Hoods. For that reason, it is important to have kitchen hoods systems cleaned on a routine basis. Grease-filled ducts and hood plenums are a common problem Farazandeh sees at restaurants, but they are easily preventable problems, Farazandeh said.
Hood, duct and fan cleaning performed on a regular basis by a professional company is the easiest, cheapest and most practical way to reduce the potential for grease fires to occur in the commercial kitchen. It also is important that exhaust systems always are in good working condition because they must be able to remove smoke and grease from the kitchen.
How Often To Clean
How often kitchen systems should be cleaned varies according to the type of cooking methods, the equipment type and the amount of food cooked daily, Farazandeh said. But there are recommendations that restaurant owners and managers can follow when trying to determine how frequently to have kitchen hoods, fans and ducts cleaned by a professional.
Restaurant kitchen systems should be cleaned at least every six months, he said. Commercial establishments that use deep fat fryers and/or charbroilers should clean these systems every three months at a minimum.
The same goes for restaurants that use a great deal vegetable oils in their cooking processes- they need to schedule cleanings every three months. When vegetable oil grease is allowed to accumulate, it becomes “glue-like” and removing it is a difficult task.
Restaurants that use wood fires or smokehouses should have their systems cleaned at least every month.
