The National Fire Protection Association reports that between 2003 and 2006, there were more than 109,000 non-residential structure fires. Of those, cooking equipment was the No. 2 cause of those fires, making up 17 percent of the reported fires.
In another report released by NFPA regarding the leading items first ignited in restaurants and bars, cooking materials numbered the most, at nearly 50 percent.
“This is just the nature of restaurants,” Farazandeh said. “I would venture to guess that having some sort of fire at some point is inevitable.”
Keeping kitchen hood, duct and fan systems clean helps prevent a small fire from quickly spreading into a large, costly fire that could shut down a restaurant, he said.
2. Grease Buildup Is Potential Fuel
When grease is left to clog fire suppression system link lines or kitchen hood plenums and ducts, it is like having fuel on standby should a fire break out, Farazandeh said. Routinely cleaning fans, ducts and hoods is one of the cheapest, easiest ways of reducing the potential for restaurant grease fires.
3. Routine Cleanings Mean Easier Cleanings
Different restaurants require different cleaning schedules, which are determined by the types of cooking processes used and the volume of food cooked. The experts at APS-Hoods can suggest a cleaning schedule when they meet with the restaurant owner or manager, Farazandeh said.
Maintaining a routine cleaning schedule saves money and reduces down-time. The longer some types of grease are left to collect on kitchen hoods, ducts and fans, the stickier and more difficult to remove they become. Following a recommended schedule prevents this from happening by removing this potential fire hazard regularly.
Regular cleanings also can be done before or after hours without running into operation hours.

“This is a fire hazard waiting to happen,” he said. “That’s why we try to get restaurants on annual schedules, because performing cleanings several times each year goes a long way toward preventing fires.”
