PLACENTIA, CA—American Professional Services (APS-Hoods), which performs Ventura, CA hood installations, recently released a recommended cleaning schedule for restaurant owners to follow, in an effort to prevent grease build-up in commercial kitchens.

Grease that is left to clog link lines in fire suppression systems, or that builds up in hood plenums and ducts can fuel a fire if one was to break out, said Massoud Farazandeh, chief executive officer of APS-Hoods.
