PLACENTIA AND LOS ANGELES, CA— In a lot of circles, mention the word “custom” and many people equate that with “costly.”

Customization in the realm of San Francisco commercial hoods does not have to be synonymous with increased expenses, said CEO Massoud Farazandeh, who founded APS-Hoods, a Placentia and San Francisco hood cleaning company, in 1989.

After 30 years in the business, Farazandeh determined in 2009 that he could provide better kitchen hood products if he had the ability to fabricate custom hoods when the need arose. In August 2009, he opened the company’s Placentia fabrication facility.

The Placentia location gave APS-Hoods the space the company needed for the equipment, Farazandeh said, adding that he had the equipment in storage at the company’s Colorado headquarters until opening the California facility.

“Since then, our custom fabrication work has increased exponentially,” Farazandeh said. “We are not completely independent yet. We still purchase some hoods from other manufacturers.”

Contrary to popular belief, there are plenty of occasions where it makes more sense to have a custom hood fabricated than to purchase a standard sized hood, said the San Francisco hood sale specialist.

For example, restaurant owners who are short on space or want more flexibility with their equipment can benefit from custom hoods. Without the customization option, the owner who has 8 feet of kitchen equipment that must fit under a hood must have two standard 6-foot hoods installed to cover the equipment. With custom fabrication as an option, Farazandeh can fabricate a hood just large enough to meet standard fire safety requirements.

“In a case such as this, it absolutely is more cost-effective to buy one custom-made 9-foot hood instead of two prefabricated 6-foot hoods,” said the San Francisco hood installation professional.

Another benefit of customization that Farazandeh stresses is quality control.

“We know exactly what the hood is like when we build it ourselves,” he said. “We gather a lot of feedback from the client to see exactly what they want, and we build it according to each individual client’s needs.”

APS-Hoods doesn’t manufacture all of the kitchen hoods it sells. For instance, Farazandeh still orders UV hoods from a manufacturer. Logistics have prevented the company from going completely solo yet, he said. However, plans are in the works to begin custom-building UV hoods in the future.

UV hoods contain an ultra-violet light system inside the hood that melts the grease away constantly, preventing it from building up. Grease drains into an apparatus that must be changed weekly. These hoods are ideal for buildings in tight downtown areas where restaurant owners can’t run a duct up through the roof or out the sides of a building because of building height, space between buildings, or due to city codes.
