Many restaurants experience increased sales around the holidays as people opt to purchase baked hams or fried or smoked turkeys for Thanksgiving, Christmas and other December holidays, rather than make their own at home.

Restaurants that use smokehouses or wood fires should have their systems cleaned monthly. Dining establishments that that use charbroilers and/or deep fat fryers should have these systems cleaned at least every three months.
Restaurants that use high volumes of vegetable oils in their cooking processes should go no longer than three months between cleanings. When vegetable oil grease is left to build up, it becomes “glue-like” and removing it is a difficult task.
