Long Beach Hood Sales Company Springs into Action as New Restaurants Open

PLACENTIA AND LONG BEACH, CA— Spring has sprung and with it historically has come a wave of new Long Beach restaurant openings.

The Long Beach hood sales company of American Professional Services (APS-Hoods) is preparing for that busy spring restaurant season, which typically results in increased calls for hood sales, installations and cleanings, said Massoud Farazandeh, chief executive officer of APS-Hoods.

Headquartered in Colorado, APS-Hoods opened a fabrication facility in Placentia, CA in August 2009 to better address the increased calls for Long Beach hood cleaning and other services, as well as calls for service throughout the state.

Lots of new restaurants open in locations that previously housed restaurants and often, they simply clean and use the existing kitchen equipment. This can be a viable way of holding down start-up costs, provided the equipment has been maintained well and is in good working condition, said Farazandeh, a kitchen exhaust hood fabricator.

Determining whether the equipment is safe for reuse can be done by a qualified kitchen hood installation and inspection company.
“Sometimes the previous restaurant went out of business due to financial reasons, so it’s possible that in their final months, they failed to maintain their routine hood, duct and fan cleanings as a cost-cutting measure,” Farazandeh said. “We’ve seen cases where some restaurants haven’t cleaned their hoods in a year because of finances. If this equipment is going to be used by the new restaurant, it is important to have it inspected and cleaned if necessary.”

Grease builds up in kitchen fans, ducts and hoods if it isn’t cleaned routinely. Once it builds up, it becomes a fire hazard and the longer it is left, the more difficult it is to remove.

“However, we can remove all of the grease build-up from a system and have it looking like brand new,” he said.
APS-Hoods offer cleaning packages for restaurants that are designed to keep the restaurants on a schedule so that grease doesn’t accumulate and create a fire hazard.
Farazandeh offered these tips for restaurant owners seeking a qualified hood cleaning company to do an inspection or clean their hood system:

  • Ask for details regarding what the cleaning services entail.
  • Ask the company what cleaning and inspection standards it adheres to, such as NFPA- 96, the International Mechanical Code and the International Fire Code.
  • Ask for proof of insurance, certifications and licenses.
  • Ask for references.

Once the restaurant owner has selected a reputable company to provide the hood cleaning service, the company should place the restaurant on a schedule for regular cleanings, Farazandeh said. The schedule will depend upon the type of food cooked, as well as the volume of food and the type of cooking processes used.
For example, restaurants that use wood fires or smokehouses in their cooking processes typically need to have their systems cleaned once each month. Those that use deep fat fryers, charbroilers or those that cook with large volumes of vegetable oils should have their systems cleaned every three months at a minimum.
Every restaurant should have fans, ducts and hood cleanings performed at least every six months, Farazandeh said.
