Orange county branch by the first of August, 2009. “All of the logistics are in place, and we are set for an August 1<sup>st</sup> grand opening” said Farazandeh. <span> </span>“We are very excited about this grand opening. I will personally be present as I will be installing hoods in Southern California all that week” he added. <span> </span>The opening of this location was driven by high customer demand for N.F.P. exhaust hood installations in southern California. Farazandeh felt that the only way to meet the demands of customers would be to establish a new location.</p>
<p class="MsoNormal">The new office will open amidst Nation Wide Fire Protection’s national scale expansion in Commercial kitchen hood installation services. “I am committed to meeting my customers’ demands. If it means traveling to my customers in different states throughout the week, or opening new locations were the demand is high, I will do it.”added Farazandeh.</p>

<p><span id="more-144"></span>One service that is in particular demand among <a href="http://www.aps-hoods.com/hood-sales-installations/california.html" target="_self">Los Angeles hood installation</a> clients is custom fabrication, said Massoud Farazandeh, general manager of Nationwide Fire Protection Corp., an affiliate of APS-Hoods.</p>
<p>APS-Hoods custom fabricates a variety of parts for commercial kitchen hood systems to make sure that each client’s individual needs are met, Farazandeh said.</p>
<p>These parts include condensation hoods, make-up air systems, pizza oven hoods, dishwasher exhaust ductwork, stainless steel countertops, commercial stainless sinks, dish tables, stainless steel work tables, stainless wall shelves and cabinets,  custom trim pieces, stainless wall cabinets, equipment stands, sneeze guards and aluminum walk-in cooler floors and flashing, to name a few examples.</p>
<p>Offering custom fabrication services to Los Angeles and Anaheim eating establishments and commercial kitchens meant obtaining an office and workshop in the area, Farazandeh said. APS-Hoods has provided <a href="http://www.aps-hoods.com/" target="_self">Los Angeles hood cleaning</a> and installation services for years without the need for a shop there, but custom fabrication must be done in the area where it is needed.</p>
<p>“Custom fabrication is not possible when you have to make everything in another city and bring it to the location where it is needed,” Farazandeh said. “Now we can offer the complete array of services.”</p>
<p>Custom fabrication has been a part of APS-Hoods’ service offering for about 16 years. It began as a result of customer demand.</p>
<p>“There are a million things to do when constructing a restaurant,” he said. “A restaurant owner doesn’t want to go to 50 businesses to get them all done, so the minute they find out that one guy can provide all of their kitchen needs, that’s a relief to them.”</p>
<p><strong>Fabrication in Action</strong><br />
Farazandeh once worked with a chef who wanted all stainless steel counters and shelves because he found it difficult to keep his kitchen “shining and beautiful,” he said. “We made the walls, counters, everything stainless, and every piece had to be fabricated to cover every counter and space.”</p>
<p>By going with stainless steel, it was easier for him to keep a clean-looking kitchen.</p>
<p>“That was his preference and after 10 years, it still looks like it’s new,” Farazandeh said.</p>
<p>Custom fabrication becomes a necessity when customers make requests such as the one made by that chef or for equipment of specific heights and dimensions. It often is cheaper and saves time to make hard-to-find pieces, he said.</p>
<p>“Making something on site means there is no need to have items shipped, and there’s no need to invest valuable time in searching for items that are difficult to come by,” Farazandeh said. “The middle man also is eliminated, which can save some money.”</p>
<p>It became evident early on that APS-Hoods would have to find a way to provide custom <a href="http://www.aps-hoods.com/free-quote/quote.html" target="_self">fabrication in California</a>, simply because of the size of Orange County and the concentration of restaurants in the area.</p>
<p>“There aren’t enough people doing this,” Farazandeh said. “Individually, these services are out there, but they weren’t offered under one roof. Now, restaurant owners and managers can make one phone call and get many things done.”</p>
<p>Offering these services in California means staying up to date on regulations and building codes, he said.</p>
<p>“Codes are updated fairly frequently, so we routinely update the way we fabricate parts for our hood systems and other equipment to ensure they continue to meet all code changes,” Farazandeh said. “California is a very highly regulated and green state, and we have made extra efforts to make sure every one of those requirements are met or surpassed.”</p>
<p>Although APS-Hoods is headquartered in Denver, CO, Farazandeh said he believes that in time, he will have as much work in California.</p>
<p>“Finding the right manpower was the hardest part, but that is coming together,” he said. “We are investing a lot of money into equipment for this area because of customer demand.”</p>

<p><span id="more-142"></span>That is why it is important not only to have kitchen hood systems cleaned of flammable build-up on a routine basis, but to have them cleaned by a professional who knows how to perform the work properly, said Massoud Farazandeh, general manager of Nationwide Fire Protection Corp., an affiliate of American Professional Services (APS-Hoods).</p>
<p>APS-Hoods has provided <a href="http://www.aps-hoods.com/" target="_self">Colorado Springs hood cleaning</a> services since the company opened for business in 1989.</p>
<p>The <a href="http://www.nfpa.org/assets/files/PDF/Research/OSeatingdrinking07.pdf" target="_blank">National Fire Protection Association</a>’s Fire Analysis and Research Division released a study in February 2007, which stated that 54 percent of fires in restaurants originated in the kitchen</p>

<p>Farazandeh said there are some criteria restaurant managers and owners can use when selecting a professional exhaust cleaning company to help ensure they have selected the right person for the job.</p>
<p>One of the first questions to ask is to request details regarding the scope of the cleaning services.</p>
<p>“There are companies out there that will clean the hood only, and never touch the ducts or the exhaust fans,” Farazandeh said. “Not cleaning each part of the system can leave the restaurant vulnerable to significant property damage in the event of a fire.”</p>
<p>It’s also a good idea to ask about the inspection and cleaning standards that the company follows. The Most reputable companies abide by the established standards outlined in the following codes:</p>
<p>• NFPA-96: the standard for ventilation control and fire protection of commercial cooking operations.<br />
• The International Fire Code: includes regulations that govern the protection of life and property from varying explosions and fire hazards.<br />

Upon completion of the work, professional companies should provide something in writing that outlines what was done, any deficiencies that were found and recommendations on items that should be repaired or replaced, he said. <p>Companies also should be willing to provide a list of references that restaurant owners and managers can contact.</p>

Once a restaurant has selected a cleaning company, it is a good idea to consult with the company on how often their kitchen hood system should be cleaned, Farazandeh said. The types of cooking processes used, along with the volume of food cooked, are factored in when determining the frequency of cleanings.</p>
<p>“At a minimum, hood systems should be cleaned twice a year,” he said. “But with some processes, we commend cleaning the systems every other month.”</p>

<p>But when it comes to <a href="http://www.aps-hoods.com/" target="_self">commercial kitchen exhaust hoods</a>, more environmentally friendly options aren’t ideal for every commercial kitchen, and in some cases they aren’t yet cost effective, said Massoud Farazandeh, general manager of Nationwide Fire Protection Corp., an affiliate of American Professional Services (APS-Hoods).</p>
<p>APS-Hoods has provided <a href="http://www.aps-hoods.com/services/restaurant-construction.html" target="_self">commercial hoods</a> sales and cleaning services in its home state of Colorado and throughout the United States since 1989 and Farazandeh has witnessed many changes in the industry. When manufacturers of ultraviolet hood systems started touting environmental friendliness, cost effectiveness and savings on cleaning costs, he decided to research the issue further.</p>
<p>UV hood systems have been used in Europe since 1998 and <a href="http://www.aps-hoods.com/services/hood-duct-fan-hvac-installations.html" target="_self">hood installation</a> companies in the U.S. began installing them in 2000, according to a Feb. 17 Food Equipment News article by Tom Carter, vice president of sales for Caddy Corporation. (<a href="http://www.foodequipmentnews.com/2009/02/how-does-uv-light-technology-in-an-exhaust-hood-system-work.html" target="_blank">http://www.foodequipmentnews.com/2009/02/how-does-uv-light-technology-in-an-exhaust-hood-system-work.html</a>) Caddy Corp. manufactures food service equipment, including UV hood systems.</p>
<p><a href="http://www.caddycorp.com/" target="_blank">Caddy Corp.</a> recommends the systems for establishments including hotels, restaurants and hospitals that include lots of grease in their cooking processes, according to its Web site.</p>
<p><strong>UV Systems- How They Work</strong><br />
Oils and greases used in restaurant cooking processes collect over time in kitchen exhaust fans, hoods and ducts, Farazandeh said. When these parts of the hood system aren’t cleaned on a regular basis, these cooking materials pose a fire hazard.</p>
<p>UV hood system manufacturers claim that their systems provide a cost-effective, environmentally friendly alternative to traditional cleaning methods because they are equipped with a series of removable grease-particulate extractors, Carter stated in his article. Inside the hood is a series of UV “C” lamps. Grease particles and other effluent that is not collected by the extractors passes over these lamps and a chemical reaction converts the grease into water vapor, carbon dioxide and tiny non-grease compounds.</p>
<p>Manufacturers also say <a href="http://www.aps-hoods.com/" target="_self">UV hoods</a> are comparable in price to water wash hoods, and those who opt for the UV hood also save money by eliminating the need for drains, grease traps and plumbing costs related to those items, according to Carter’s article.</p>
<p><strong>Benefits of UV</strong><br />
UV radiation is an environmentally friendly and economical alternative to chemical techniques, according to the Web site for Heraeus, a company involved in specialty lighting sources, among other products.<br />

<p>Other benefits of the UV hood systems cited in Carter’s article include:</p>
<p>•    The system has no special installation costs or requirements.<br />
•    It is equipped with self-monitoring capability for fan operation and lamps.<br />
•    The system does not require wash down.<br />
•    It uses less than 300 watts of light for every seven feet of hood.<br />
•    It has identical maintenance requirements to standard baffle filter hoods, and the filters can be cleaned in a dishwasher when needed.<br />
•    Grease is prevented from collecting in ductwork, which helps keep the duct system and exhaust fan clean.</p>
<p><strong>Myths Busted</strong><br />
The initial information Farazandeh heard about the UV hood systems sounded promising, he said. Manufacturers claimed that the systems had improved fire prevention features, reduced grease collection and resulted in savings for restaurant owners when it came to cleaning costs.</p>
<p>“But for some of these claims, the field realities are different,” Farazandeh said. “Personally, I believe that routine maintenance costs are more expensive.”</p>
<p>UV hood systems require less maintenance than traditional hood systems, according to manufacturers. Where traditional hood systems may need cleaning four times each year, UV systems can be cleaned twice a year. However, the cleaning and maintenance they require is more involved and technical than that of its traditional counterparts. UV systems require servicing by technicians who have been specially trained by the UV hood manufacturers. These technicians must possess specific knowledge on how to arm and disarm the system and how to dismantle and clean the extractors filtering system.</p>
<p>“Ultraviolet hood systems require different procedures for cleaning the filter compartments,” Farazandeh said. “If employees of hood cleaning companies aren’t properly trained in this method, it is likely that they will damage the equipment.”</p>
<p>Farazandeh also disagrees with manufacturer claims that maintenance of these systems is more economical.</p>
<p>“I have spoken with manufacturer reps and to the best of my knowledge, the maintenance costs of these systems can be as much as four times the cost of maintaining traditional hood systems,” he said.</p>
<p>And although the manufacturers recommend UV hood systems for widespread applications, Farazandeh said they aren’t for everyone.</p>
<p>“I don’t think I would be recommending the right thing to my customer if I said that they were a viable option for everyone because of the costs involved after installation,” he said. “In my opinion, the product is good, but people should do their homework prior to purchasing the system.”</p>
<p>With that said, there are some applications in which Farazandeh would recommend UV hood systems. Those include certain government facilities that have strict environmental requirements, he said.</p>
<p>Hotels in dense, congested areas might also be good candidates for the system, he said. In locations where there are crowded alleys and buildings are close together, “you don’t  want a lot of grease and smoke introduced into the environment.”</p>
<p>Some companies have their own environmental standards that are stricter than government standards. In those cases, Farazandeh would recommend UV hood systems, he said.</p>
<p>“Even the company reps I have spoken to don’t recommend these systems for every application,” Farazandeh said. “They’ve also told me that about 85 percent of their clients are government jobs, where the funding already is in place.”</p>

<p>The fact that a company doesn’t have local headquarters doesn’t always mean that hiring it will cost you more, said Massoud Farazandeh, general manager of Nationwide Fire Protection Corp., an affiliate of APS-Hoods.</p>
<p>APS-Hoods, which is based in Denver, CO, recently completed a <a href="http://www.aps-hoods.com/services/hood-duct-fan-hvac-installations.html" target="_self">restaurant kitchen hood installation</a> and fire system installation job in Tatum, NM. The owner was opening a new restaurant and was in search of an installation company that specialized in <a href="http://www.aps-hoods.com/" target="_self">commercial hoods</a>.  She couldn’t get any New Mexico or Texas companies to come out and offer an estimate because of the town’s remote location, Farazandeh said. Tatum, which is located near the New Mexico/Texas state line, has a population of less than 700. The nearest major city is Lubbock, Texas, which is more than 80 miles away.</p>
<p>The restaurant owner called a company located about 45 minutes away and they weren’t interested in giving her a bid.</p>
<p>“We came along and did a job no one else was willing to do in their own state,” Farazandeh said.</p>
<p>The restaurant owner sounded surprised when Farazandeh told her that his Colorado-based company would perform the much-needed work.</p>
<p>“A lot of people don’t realize that we accept jobs such as this, which are located out of state and in remote areas,” Farazandeh said. “It was far, but that’s the way we operate. We’re a <a href="http://www.aps-hoods.com/" target="_self">national company</a> that goes anywhere in the country to do a job.”</p>
<p>Farazandeh said he wants to get the message out that APS-Hoods will “come to your neighborhood no matter where you are and provide the same quality of work that we do in Denver.”</p>
<p>Technology helped make the job possible. The customer paid a travel fee, but every other cost was equal to or less than she would have paid a local company, Farazandeh said. With a laptop and Internet access, he was able to find all of the parts and materials necessary to complete the job and have them shipped directly to the restaurant location.</p>
<p>“It was just as easy as it would have been in Denver,” he said. “We had everything we needed delivered on time.”</p>
<p>That included materials needed to do some custom work. For example, once workers penetrated the ceiling, they realized they needed to fabricate a duct to go around a rafter. This part was made and welded on site to fit precisely between the rafters, Farazandeh said.</p>
<p>“Every job is unique,” he said. “You have to know the building, discover what was done right and fix what was done wrong.”</p>
<p>Other custom work APS-Hoods often provides is stainless caps and strips to function like molding around the floor and ceiling. Sometimes water seeps through in areas, so workers make molding to prevent the water seepage. This is made of stainless steel so it can be hosed down and washed when needed.</p>
<p>In some restaurant set-ups, there is a space between the ceiling and the top of the hood. In those cases, APS-Hoods might suggest making stainless steel skirting to create a wall.</p>
<p>“That’s something a lot of companies I know can’t do,” Farazandeh said. “They just get a piece of equipment and install it. They can’t customize anything.”</p>
<p>The Tatum, NM job typically would have taken one week to finish, but Farazandeh and his crew worked extended hours to complete it in four days.</p>
<p>“The way we use technology today, the entire country is like a hometown,” he said. “People need not think they will have to pay us a lot more because we’re coming from another state.”</p>
<p>The restaurant owner was quite pleased with the finished product.</p>
<p>“They were very impressed with the work and she gave me our final check halfway through the job,” Farazandeh said. “That hasn’t happened too many times during our career.”</p>
